a healthy breakfast switch up

Breakfast is the most important meal of the day. And it’s important to get your day started on a healthy and nutritious note.It’s tempting to sweeten up your morning meals with bakery, but you need to keep that diet on track.If you’re tired of the eggs and fruit routine, I have an easy way to create something a little different using items you probably already have on hand.  The end result will be something that smells and tastes like a fresh, crumbled banana nut muffin.

When done, it will look and taste just like a fresh banana nut muffin.

Here’s what you need:
1 egg
1 banana
1 T almond butter (peanut butter is OK, but almond butter is healthier)
Crushed walnuts
Dash of cinnamon

Start by lightly coating a skillet with olive oil or coconut oil. In a large bowl combine the egg, banana, almond butter, walnuts and cinnamon.  Smash up the banana and mix up the ingredients until you have a mixed, lumpy batter.

Pour the batter into the hot skillet and scramble it much like you would for making scrambled eggs. You’ll want to scramble this mixture for a couple of minutes until it looks like a crumbled, golden brown muffin.

Serve the good in a bowl and top with fresh berries, or a touch of real maple syrup.

You’ll have a different, but tasty treat for breakfast that contains a great mix of protein, fiber and other nutrients to get your day going strong. And it took you less than 10 minutes to whip up.
