Paleo Pumpkin Muffins

There’s really no other quintessential fall flavor like pumpkin.  And just because you are sticking to your paleo diet does not mean you have to give up fresh, baked comfort foods.  You can still enjoy a warm pumpkin muffin on a cool fall morning.

Here’s a recent batch of pumpkin muffins I made on a recent Sunday afternoon.

I’ve come across a number of recipes and tried out a couple myself.  Below is my version of a delicious, moist pumpkin muffin.

What you need:

  • 6 eggs
  • 3/4 cup pumpkin puree
  • 1/2 cup banana, mashed
  • 1/2 cup coconut flour
  • 2 tsp  vanilla
  • 1 tsp pumpkin pie spice
  • Dash of cinnamon
  • 1/4 cup honey
  • 1/2 tsp baking powder
  • Handful of walnuts or almonds, chopped – if you like

How to make it:

  • Preheat oven to 400′F
  • Line muffin tins with cupcake liners
  • In one bowl, mix all the dry ingredients
  • In another bowl, mix wet ingredients
  • Add the dry to the wet ingredients
  • Mix well and spoon batter into muffin tins, fill about 3/4 way
  • Bake for 18-20 minutes
