Two paleo lite snacks

Life is busy. And us caveman don’t always have time to hunt or gather our meals.  So I’m sharing two easy, tasty paleo-lite snacks you can make in bulk and pack as you go for the week.  These are great to throw in your gym bag, the car or keep at your desk. And best of all, they are paleo friendly. Happy snacking!

Paleo Trail Mix

This is an easy no-brainer, but it took me awhile to finally mix up a paleo-lite trail mix.  It’s easy and it’s great to make a big batch of it on Sunday and have a ready to go snack on hand all week long.


  • Almonds
  • Walnuts
  • Dried fruit of your choice (I prefer pineapple chunks, cranberries, blueberries, and banana chips)
  • Coconut flakes (unsweetened)
  • Fresh blueberries

The rest is simple.  Mix equal portions of each.  I’d recommend 1/2 cup of each into a large storage container.  Gently mix or shake it up.  Then take as your need or load up some small plastic food containers.  All you need is a handful!

Sweet and Spicy Coconut Trail Mix

Here’s another great trail mix that takes just a little more work, but has a great salty/sweet/spicy kick to it.  It’s perfect for when you’re craving good old junk food.


  • 2 cups coconut flakes (unsweetened)
  • 1/2 cup almond halves or slivers
  • 1/2 cup walnut pieces
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/4 tsp chili powder (I like chipotle!)

In a skillet gently toast the coconut, almonds and walnuts.  Keep an eye on it and keep the mixture moving in the pan. You want it to get light and toasty, not burned.  Once you’re done lightly toasting the nut mixture, place it into a container that you can close with a lid.  Add in the cinnamon, sea salt and chili powder. Seal the container and shake! Shake it so the entire mixture is evenly coated with the seasonings.  Now you have a great salty/sweet treat to feed those cravings!
