Paleo breakfast bowl

My life has been a little too crazy in 2013.  I’m balancing a full-time job, full-time school and trying to launch my personal trainer career.  With all of this, my morning routines are tight on time. But, I found a way not to skimp on breakfast. I call it the paleo breakfast bowl.  And best of all, it can be prepped ahead of time.

It’s a basic concept.  Grab any small plastic food container bowl.  Crack open an egg or two and drop in.  Then add in any of your scrambler favs (bacon, chopped peppers, mushrooms, green onions, dash of hot sauce – any old paleo friendly fare will do).

Snap on the lid and place in the refrigerator. Come morning, throw the skillet on the stove, heat and dump the contents of your paleo bowl.  Scramble until the eggs are cooked and enjoy!

You can always make a couple of the bowls ahead and keep them on hand.  It saves precious time in the morning when you may not feel like chopping and mixing.
